Homemade Yellow Cake Mix

You’ll never run out of cake mix again when you can make this simple Homemade Yellow Cake Mix. Made with just 4 simple pantry staples! HOMEMADE BAKING MADE EASY If you’ve followed me for any period of time, you know I love a good boxed cake mix! I will be honest and admit I am not the world’s best baker so being able to make different types of treats with cake mixes is a lifesaver! But if you love the ease of cake mixes but prefer that your desserts be totally homemade, I got you covered! This homemade cake mix makes the most buttery, moist, fluffy yellow cake! Plus, you can make a few extra jars of this mix and give them to friends and family as gifts and they’ll absolutely love it! FREQUENTLY ASKED QUESTIONS:  Will this make a cake exactly like a boxed mix? This is not an exact dupe to a cake mix from a box. I find that homemade cakes are slightly more dense than what you’d get from a boxed cake mix. There are ingredients in boxed cake mix that you just can’t buy from your normal grocery store that are used as preservatives but that also add moistness. These are usually the ingredients most people are trying to avoid when making homemade but don’t expect it to taste exactly the same – this is homemade y’all. What frosting did you use to frost the cake? You’ll see an image at the bottom of the instructions of a cake made using this yellow cake mix and I used my Chocolate Frosting from my Chocolate Sheet Cake Recipe. It was the PERFECT pairing! Can I use oil when making the cake with the mix instead of butter? Yes, oil can be used in place of the butter if desire. But, it’s not a one for one swap out. When making this cake, I used 10 Tablespoons of butter, so you need to swap it out for about 7 ½ Tablespoons of oil (which is just under half a cup).  What do I write on the tag? If giving this as a gift, make a tag that includes what ingredients they need to mix with this cake mix, what size baking dish and at what temperature and how long they need to bake the cake for. How should I store the Homemade Yellow Cake Mix? Store your cake mix in an airtight container, like a mason jar, in a cool, dry place, for up to 3 months. How long does a Yellow Cake baked from this mix usually last? The baked cake will last at room temperature (covered) for up to 5 days. Can I freeze a cake made from this homemade mix? You certainly can. Make sure to store it properly and you can freeze it for up to 3 months. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) all-purpose flour – you could use cake flour for this. Cake flour does tend to make for a slightly fluffier cake but cake flour is more expensive than all purpose. You need to add an extra 2 Tablespoons of cake flour for every one cup of all purpose flour. granulated sugar – if you need to make this sugar free, you can use a 1:1 sugar substitute (like Splenda for baking). baking powder salt HOW TO MAKE HOMEMADE YELLOW CAKE MIX To make the mix, pour the flour, sugar, baking powder, and salt into a 2-quart jar. You may need to pack it down some to fit. Place the top on the jar and it will keep at room temperature for up to 3 months. HOW TO MAKE A CAKE FROM YELLOW CAKE MIX To make the cake, preheat the oven to 350°F. Spray a 9×13 baking dish with baking spray and set aside. Place the cake mix into a large bowl and stir together, set aside. Whip the butter until smooth in the bowl of a stand mixer with the paddle attachment or in a large bowl with an electric hand mixer. Add the eggs one at a time, mixing the first one in fully before adding the next. Add the milk and vanilla and stir. The mixture may appear lumpy, but that’s okay. Add the flour mixture into the bowl in 3 batches, fully mixing it in. Pour the batter into the prepared baking dish, and smooth out the top. Bake for 32-40 minutes until a toothpick inserted into the center comes out clean. Allow to cool completely then add your favorite toppings!
