You don’t need to be a kid to enjoy this comforting dish! Combining cheesy cornbread‚ baked beans and hot dogs‚ this Beanie Weenie Casserole is always a hit with young and old alike! AN OLD SCHOOL FAVORITE DINNER RECIPE Beanie Weenie Casserole is a classic family favorite! This simple casserole is made with just a few ingredients that you may already have in your pantry. Many of us who grew up in the 60’s‚ 70’s and 80’s have very fond memories of beanie weenie. It’s the perfect dish to make for a busy weeknight dinner and it makes plenty of servings so everyone can go back for seconds. With a savory base of baked beans and diced hot dogs‚ this casserole is topped off with a cheesy cornbread mixture and is guaranteed to bring back memories of a simpler time! FREQUENTLY ASKED QUESTIONS: What kind of hot dog should I use? Use whatever hot dogs you like. This would also work with regular hot dogs‚ beef hot dogs‚ kielbasa‚ or other smoked or precooked sausage. My family prefers all beef hot dogs. Can I add more cornbread? Don’t use more than one box of Jiffy cornbread mix or it will not properly cook all the way through. I did try to make it with two boxes and it never set up properly. It’s tempting to want more cornbread topping but it won’t work here. If you really want more cornbread‚ just make an extra pan of cornbread to serve with the beanie weenie casserole. Can I use less beans? Yes‚ if you don’t like so many beans or maybe you don’t like it so saucy‚ you can certainly use less. Instead of adding the cheese as a layer‚ can I mix it in? Sure. Just mix the cheese right into the cornbread mixture if you would like‚ then just bake the entire 45-50 minutes until done. Can this recipe be cut in half? Yes but you may not want to use all of the cornbread mixture. It might make it too thick and then not set up properly. I have never cut it on half so you’d half to judge how much to use. Can this be made in the crock pot? With every baked good recipe‚ I always have someone ask about making it in a crock pot. Some recipes really just turn out better in the oven. This is one of those recipes. I don’t recommend doing it in the crock pot as the cornbread layer will not end up as fluffy as when baking it since so much steam is produced in the crock pot. However‚ if you decide to give it a go‚ please let me know how it turns out! How to store leftover casserole? Keep leftover Beanie Weenie Casserole in a container for up to 3 days in the fridge or try freezing it for up to 3 months. How do I reheat this casserole? To reheat‚ place leftovers in an oven safe dish and place it back in the oven‚ covered with foil to prevent burning or in the microwave (without foil). INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) baked beans – I just used the standard baked beans but Bush’s beans makes all kinds of different flavored beans so feel free to use what you enjoy. It’s really easy to tailor this recipe to your tastes. bbq sauce – if you want to spice this up a bit‚ try using a spicy BBQ sauce. Alternatively‚ if you don’t enjoy the added taste of BBQ sauce then just leave it out. Jiffy corn muffin mix – we have only ever made this with Jiffy corn mix so I really can’t speak on other brands and flavors. You can certainly use other types‚ but I cannot help you with those adjustments as I have not tested this with other brands and sizes. milk – we are mostly whole milk or 2% milk drinkers in my house so that is what I always use. Skim milk will be too thin here and may leave you with a thin (instead of fluffy) cornbread layer. shredded cheddar cheese – I freshly shredded my cheese but you can use the pre shredded cheese. You can use other cheese flavors that you enjoy. Again‚ if you want to add a bit more heat to this recipe‚ try using pepper jack cheese. HOW TO MAKE BEANIE WEENIE CASSEROLE Preheat the oven to 350°F. Spray a 9×13-inch baking dish with cooking spray. Add the cut up hot dogs to the baking dish. Add the baked beans and bbq sauce‚ stir to combine‚ and smooth out into an even layer. In a medium bowl‚ stir together the corn muffin mix‚ egg‚ and milk until smooth. Spread the cornbread mixture in a thin‚ even layer over the casserole. Bake uncovered for 30 minutes. UPDATED 1/16/2024 Being a kid in the 1970s was great. Watching Scooby-Doo‚ playing Space Invaders‚ taking care of your pet rock — the decade was a great time to grow up for most people. But for child stars? Not so much. Long hours of work and the unbearable scrutiny of being in the limelight 24/7 robbed these kids of a normal childhood. While some were able to cope with their fame‚ many others were not and led far from happy lives. Today we’ll be looking at some of the biggest child stars of the ’70s whom time has forgotten. Our first forgotten child star… Linda Blair ‘The Exorcist’ / Warner Bros. What’s more lovable than a little girl possessed by the devil‚ spewing both her guts (represented on screen by projectile-“vomited” pea soup) and vulgar profanities? Probably anything. However‚ America didn’t seem to mind when The Exorcist was released in 1973‚ and Linda Blair (now 64) became a massive star. Just 13 when the film was made‚ Blair won a Golden Globe for her unsettling portrayal of Regan‚ the little girl whose head spun like a top. Linda Blair / Amazon After her breakout role‚ Blair rebelled against being a perfect little child star. In 1977 she was arrested and charged with felony drug possession and distribution in connection with a $3 million dollar cocaine seizure. In the early ’80s‚ Blair dated singer Rick James for two years with James stating‚ “She liked to get high and get down as much as I did.” Guess she really was a “super freak.” Blair’s recent films consisted mainly of “B” horror and slasher flicks‚ her most recent big screen appearance being in 2016’s Surge of Power: Revenge of the Sequel and‚ on TV‚ providing her voice for two episodes of 2020’s JJ Villard’s Fairy Tales. She did‚ however‚ reprise her role of Regan briefly in 2023’s The Exorcist: Believer. Lately‚ she’s been focusing more on her other passion‚ animal rights activism. But the power of Christ compels us to remind you just how big a star she was. THE EXORCIST‚ Linda Blair‚ 1973. I think people seemed to believe when they saw me that they might be becoming possessed. That is the look in their eyes. They were frightened of me. And no matter what I said or did‚ it didn’t change. And the fact that it was a job in film‚ it just never came across. And I really wish that things had been different back then‚ but people couldn’t see that it was entertainment.” Mason Reese Reese in a commercial / YouTube Screenshot A tiny child with limitless charm and the face of an old man. During the 1970s‚ Reese was ubiquitous in commercials and was able to sell anything‚ hocking everything from Raisin Bran to Dunkin Donuts. When he mispronounced smorgasbord as “borgasmord” in a 1973 ad for deviled ham‚ a new national catchphrase was coined and Reese won the first of seven Clios for best actor in a commercial. His career didn’t last long‚ however‚ and by the age of 17 Reese was burned out on acting and quit the business forever — understandable for a kid who had made over 75 commercials in 10 years! He even bragged that he lost his virginity to a bathroom attendant fan he met at a club! Reese now owns the nightclub Nowbar in New York and spent his time denying that he was a sugar daddy for his 27-year-old soft-core porn actress girlfriend‚ who broke up with him after being together for three years. Chaz Bono ‘The Sonny &; Cher Comedy Hour’ / CBS When your parents are Sonny and Cher‚ it would be impossible not to be a child star. Chaz Bono‚ born with the name Chastity‚ shot to fame in the early ’70s‚ appearing on his parent’s hit TV show The Sonny and Cher Comedy Hour. Cher was the biting wit‚ Sonny the straight-man‚ and Chaz the almost irresistibly cute one. Despite his early fame‚ Chaz decided not to follow in his parent’s footsteps and shunned the limelight. He had a brief musical career in the late ’80s with the band Ceremony but didn’t find his calling until famously coming out as a lesbian in 1997‚ followed by undergoing female-to-male gender transition between 2008 and 2010. Chaz Bono / Billy Bennight/AdMedia Since then‚ Chaz has been an outspoken activist‚ working as a writer for The Advocate‚ a national magazine promoting LGBTQ rights. He also appeared on a season of Dancing With the Stars‚ becoming the first openly transgendered man to star on a major network show for something not transgender-related. He danced into our hearts as a child star in the ’70s‚ and has been dancing ever since! Tatum O’Neal ‘Paper Moon’ / Paramount Pictures What were you doing when you were 10? Climbing trees‚ watching cartoons‚ wetting the bed? Well‚ at 10 Tatum O’Neal had just become the youngest person to ever win an Oscar! O’Neal starred alongside her father‚ Ryan O’Neal‚ as a con artist too adorable to resist in 1974’s Paper Moon. The movie catapulted her to fame‚ and over the next few years‚ she starred in such films as The Bad News Bears with Walter Matthau‚ and International Velvet alongside Anthony Hopkins. At this point‚ O’Neal was on top of the world. But unfortunately‚ the good times were not going to last‚ and when she fell‚ she fell hard. Tatum O’Neal / Michael Germana/starmaxinc.com Her famous father had exposed her to drugs at a young age‚ and by the time she was 17 O’Neal was living on her own‚ partying non-stop and abusing any substance she could get her hands on. A marriage to tennis great John McEnroe helped slow down her wild ways‚ but after their volatile relationship ended in 1992‚ O’Neal slowly slid back into a world dominated by drug use. When she was a kid‚ she was winning Oscars and when her daughter was a kid she was playing with syringes she found in O’Neal’s bedroom. Talk about rock bottom. But after losing custody of her children and an arrest for crack and heroin possession‚ O’Neal sought help and got clean‚ and remains sober to this day. She’s even been acting again‚ appearing in the 2018 TV movie Runaway Romance‚ and on the big screen in 2019’s The Assent and 2021’s Not to Forget. A true Hollywood rollercoaster of a life. Peter Ostrum Peter as Charlie / Paramount Pictures We all think we know the script for a child actor’s life because we’ve seen it played out so many times: Get famous way too young‚ be unable to handle the fame and attention‚ turn to drugs and alcohol to cope. The stereotypical sad story. But Peter Ostrum‚ the star of 1971’s Willy Wonka and the Chocolate Factory‚ was luckily able to escape that fate. He was just 12 years old and had never acted on TV or film when he was cast as Charlie Bucket. Talk about finding a golden ticket! Peter Ostrum / Wikimedia Commons Ostrum’s inexperience didn’t matter a bit — it actually led to an effortlessly charming performance. Industry pro Gene Wilder taking him under his wing and showing him the ropes also couldn’t have hurt. We were young teenagers and we were expected to work as young adults and be professional‚ so that meant showing up on time‚ knowing your lines and there wasn’t any messing about. He may not own a chocolate factory in real life‚ but he certainly had a happy ending. Mackenzie Phillips ‘One Day at a Time’ / CBS There are child actors who have led hard lives‚ there are child actors who have led easy lives. Then there’s Mackenzie Phillips‚ whose life reads like a story from ancient Rome. The daughter of The Mamas and the Papas singer John Phillips‚ Mackenzie became a star when‚ at the age of 16‚ she was cast as rebellious yet lovable teen Julie Cooper on the sitcom One Day at a Time. The show was a smash hit‚ and soon Phillips was making more than $50‚000 dollars a week. Unfortunately‚ the good times would not last. Surrounded by the Rock ‘N Roll lifestyle‚ Phillips had first used cocaine at the tender age of 11‚ with her father even injecting her with the drug on occasion. After years of drug use‚ Phillips began to give in to excess. Mackenzie Phillips / Birdie Thompson/AdMedia After two near-fatal overdoses‚ she was fired in 1982 from the show that made her famous. Phillips later revealed the worst of it… that at 19‚ on the night before her first marriage‚ she blacked out‚ and came to having sex with her father. Which is about the most horrible thing you can imagine. It was a sexual relationship that would last for 10 years‚ only ending after Phillips became pregnant and her father paid for an abortion. Which is enough to make anyone turn to drugs to cope. Phillips continued to struggle with addiction‚ being arrested in 2008 for trying to bring cocaine and heroin through security at the Los Angeles airport. But after a stint on celebrity rehab‚ Phillips is now clean and acting again — a positive ending to a truly heartbreaking tale. Kim Richards ‘Escape to Witch Mountain’ / Walt Disney Productions Kim Richards shot to fame in the early ’70s when she played the adorable youngest daughter in the sitcom Nanny and the Professor‚ and a psychic alien girl in the Disney hit Escape to Witch Mountain. As the archetypal sweet little blonde‚ audiences instantly fell in love with her. Richards continued to have a stable if not spectacular career — making appearances in such shows as Magnum‚ P.I. and The Dukes of Hazard in the ’80s. While she never sank into drug addiction the way other child stars did (although alcoholism became a major problem)‚ Richards did not always have the happiest life. In 1991 She was on the phone with her fiancé‚ John Collett‚ when… Pop pop! Two loud bangs followed by an eerie silence. It turned out that he had extorted $150 million dollars from the wrong people‚ and Richards was tragically forced to listen to his assassination. Kim Richards / Birdie Thompson/AdMedia Later in life‚ Richards transitioned from movies to reality TV — she was one of the original stars of The Real Housewives of Beverly Hills! In true reality TV fashion‚ she has not completely behaved herself. In 2015 Richards was arrested twice — once for public intoxication and battery‚ and once for shoplifting. Despite these brushes with the law‚ Richards continues to make sporadic appearances on our TVs‚ but we’ll always remember her best as the little girl talking in our minds. 1978’s ‘Superman’ Cast Then And Now 2024

UPDATED 1/16/2024 Look! Up in the sky‚ it’s a bird‚ it’s a plane‚ it’s the amazing cast of 1978’s Superman! By now we take for granted that every year will bring the next massively entertaining spectacle that is the modern superhero movie. But before the late 1970s‚ superheroes were consigned to campy TV shows and cheaply made B-movies. This all changed when Superman hit the theaters. At the time‚  Superman was the most expensive movie ever made‚ but took a major risk by casting an unknown as the Man of Steel. A risk that more than paid off when hidden gem Christopher Reeve blew audiences away and became a massive star. The film’s state-of-the-art special effects‚ Oscar-nominated score‚ and fantastic acting combined to make Superman an enormous success and one of the highest-grossing movies of the 1970s. Now we’re catching up with the cast of the movie that paved the way for today’s slew of superhero smash hits. Whether Hollywood legends or fresh-faced newbies‚ every actor in Superman certainly gave a … SUPER performance. Let’s get into the good stuff… Christopher Reeve (Superman/Clark Kent) Reeve as Superman / Warner Bros. For an actor to step into the iconic blue spandex and play the role of Superman seems like an almost inhuman task. Kind‚ compassionate‚ strikingly handsome‚ and able to leap tall buildings in a single bound? Superman seems almost too perfect. The producers of Superman did initially struggle to fill the Man of Steel’s boots‚ going through dozens of auditions. SUPERMAN‚ Christopher Reeve‚ 1978. ©Warner Brothers/courtesy Everett Collection “We had seen just about every actor imaginable from television to motion pictures to everything else‚” reflected director Richard Donner. “Nobody fit the costume. Nobody could fly. If you saw Robert Redford flying‚ it would be Robert Redford flying. There was no sense of reality. That was the key to it‚ the flying. You had to believe a man could fly. I tested quite a few of the actors‚ but nothing worked. The producers even sent over their dentist. There he was‚ standing at 6’4”‚ with piercing blue eyes‚ a chiseled jaw‚ and having packed on 30 lbs of muscle for the role‚ Reeve certainly looked like a superhero. His performance was universally praised‚ as he portrayed both the bumbling Clark Kent and the dashing Superman superbly. SUPERMAN‚ Christopher Reeve‚ Margot Kidder‚ Jackie Cooper‚ 1978 Emphasized Donner‚ “People often asked me‚ ‘Where did you find Christopher Reeve?’ I say‚ “I didn’t find him. God gave him to me.'” RELATED: Christopher Reeve Highlights Show Just How Irreplaceable He Really Was As Superman After this first success‚ Reeve went on to have a fantastic acting career‚ starring in all three Superman sequels‚ as well as a personal favorite of mine between the release of Superman 1 &; 2‚ a film titled Somewhere in Time‚ an achingly beautiful film‚ starring he and Jane Seymour. Tragically‚ 15 years after that film‚ while competing in an equestrian competition in 1995‚ Reeve was thrown from his horse‚ landing squarely on his head and severing his 1st and 2nd vertebrae. SOMEWHERE IN TIME‚ Christopher Reeve‚ 1980‚ © Universal/courtesy Everett Collection This accident left him unable to move his arms and legs for the rest of his life‚ but did Reeve let that slow him down? Not at all! He received a SAG award in 1998 for the TV adaption of Rear Window‚ and that same year won a Grammy for the spoken word version of his autobiography‚ Still Me. Reeve also created The Christopher Reeve Foundation‚ which to date has raised tens of millions of dollars for people with disabilities. He‚ unfortunately‚ passed away in 2004‚ but if there ever was a real-life Superman‚ then Christopher Reeve certainly fits the bill. Prior to casting Reeve — and even before there actually was a Superman movie in production — the producers simply could not raise financing for the film. Until they announced that they had signed Marlon Brando to the production as the Man of Steel’s Kryptonian father‚ Jor-El. That‚ in turn‚ led to Gene Hackman signing aboard to play arch nemesis Lex Luthor. SUPERMAN‚ director Richard Donner‚ Gene Hackman on the set‚ 1978 “I don’t know why they thought of me‚” Hackman admitted. “I’m not sure I would have thought of me. But Brando had already committed to the film and I felt that his name gave a certain credibility to the project. And I had always wanted to be involved in a film with Marlon Brando.” (© Warner Bros./Courtesy Everett Collection) Hackman’s acting career started out extremely slowly — as a member of the Pasadena Playhouse‚ he and lifelong friend Dustin Hoffman were voted 1956’s Least Likely to Succeed! However‚ he eventually proved the doubters wrong‚ starring in disaster smash The Poseidon Adventure and winning an Oscar for The French Connection in 1971. Hackman played the comedic — yet lethal — foil to Superman. GENE HACKMAN / HENRY MCGEE-GLOBE PHOTOS You’ve got to love Gene’s “It’s open‚ come in” as Superman pushes his way through a steel door — as one critic put it‚ he was “a used car salesman wielding nuclear missiles.” Hackman reprised Luthor for both Superman II and IV‚ and continued to have a stellar film career — no one will ever forget The Birdcage‚ The Royal Tenenbaums‚ or another Oscar-winning performance in 1992’s Unforgiven. He retired from acting in 2004 in order to focus on his second love‚ writing historical fiction novels‚ bringing to a close the career of one of Hollywood’s most accomplished actors. Margot Kidder (Lois Lane) Lois Lane / Warner Bros. Clark Kent’s confident‚ capable coworker and love interest‚ Kidder got her start working in Canadian TV and film before she fell into her most iconic role. Literally. While walking into her Superman audition‚ Kidder tripped‚ stumbled‚ and almost landed on her butt. This endeared her to the film’s director‚ Richard Donner‚ who described her as a “whirling dervish” of energy. Kidder appeared in all three Superman sequels‚ but after she objected to Donner being removed as the director of Superman II‚ her part in Superman III was cut down to 12 lines and five minutes of screentime. Margot Kidder / Wikimedia Commons “I didn’t know anything about Superman‚” Kidder pointed out. “I was in a bad marriage and it was one of those obsessive ones where you can’t leave and you can’t stay‚ and it was a big mess. I knew I had to get the part‚ because that was the only way I was going to be able to get out of my marriage‚ because the husband was chauvinistic and didn’t think women should work. So I didn’t have a clue this was going to be iconic.” SUPERMAN‚ Margot Kidder‚ Christopher Reeve‚ 1978 Post-Lois Lane‚ Kidder continued to act‚ most notably as Kathy Lutz in the original Amityville Horror. She was also very well known for her liberal activism‚ stridently opposing the first war in Iraq and supporting numerous environmental causes. Kidder was diagnosed with Bipolar disorder in 1989‚ a condition she struggled with until she tragically passed away from a drug and alcohol-related suicide in 2018. Ned Beatty (Otis) Otis / Warner Bros. As a rule‚ every super-villain needs a henchman‚ enter Otis — a fumbling screw-up who loudly pronounced his boss’ name as Luth-Or! Otis was played by Ned Beatty‚ a character actor who had achieved acclaim for supporting roles in Deliverance‚ where he squealed like a pig in his film debut‚ as well as an Oscar nomination for Network. Beatty’s inept bumbling provided Superman’s comic relief‚ and although Luthor might not have appreciated his shenanigans‚ the audience certainly did! Ned Beatty / Wikimedia Commons Beatty also appeared in Superman II and went on to have an amazingly prolific career‚ most memorably in Rudy‚ Charlie Wilson’s War‚ and as the villainous stuffed bear in Toy Story 3. In fact‚ he appeared in over 60 movies and 40 TV shows between 1978 and his retirement in 2013‚ which works out to more than three projects a year! Exhausting‚ and not too shabby for someone Variety once described as the hardest working man in Hollywood! He passed away on June 13‚ 2021 at age 83 of natural causes. Valerie Perrine (Eve Teschmacher) Miss Eve Teschmacher / Warner Bros. The beautiful‚ buxom girlfriend of Lex Luthor‚ Miss Eve Teschmacher. Although initially an accomplice in his plots‚ Miss Eve ultimately betrays Luthor by saving a drowning Superman from a Kryptonite necklace‚ cheekily stealing a kiss along the way. Perrine’s early work included 1974’s critically acclaimed Lenny‚ for which she received the Cannes Film Festival Best Actress award and an Oscar nomination. Valerie Perrine / Byron Purvis/AdMedia She later reprised her role as the bad girl with a conscience in Superman II‚ but her career went downhill after she received a Razzie nomination as worst actress for 1980’s Can’t Stop the Music. Her standing in Hollywood never recovered‚ and although she had a long career‚ it was mostly relegated to TV and cameos in such movies as 2000’s What Women Want. SUPERMAN‚ Valerie Perrine‚ Gene Hackman‚ 1978 (© Warner Bros./Courtesy Everett Collection) Perrine retired from acting in 2016‚ and she struggles with Parkinson’s disease. She also underwent dental surgery in 2017 to restore her teeth after they became damaged due to the medications she has been taking for her illness. At 80 years old‚ she’s still going strong‚ and is the subject of an upcoming documentary called Valerie. Glenn Ford (Jonathan “Pa” Kent) Jonathan ‘Pa’ Kent / Warner Bros. Superman’s adoptive father and moral compass‚ actor Glenn Ford was already an elder statesman in Hollywood. He was consistently one of the top box office draws throughout the ’50s and ’60s‚ appearing in the smash hits Gilda and The Big Heat. After Superman‚ Ford’s career slowed considerably. Unfortunately‚ Ford passed away in 2006 at age 90‚ but he will always be remembered as Superman’s guiding light. Marlon Brando (Jor-El) Jor-El / Warner Bros. By 1978 Marlon Brando was an absolute legend‚ having already won two Oscars and been nominated for a further five. That doesn’t necessarily mean he liked to work‚ however. When approached to play Superman’s biological father‚ Brando had some unique ideas for the character. He tried to convince director Richard Donner that Krypton was populated by talking bagels so that he would only have to voice-over work and not actually appear in the film. As long as he only had to work a maximum of twelve days. And got paid $3.7 dollars. And received 11.75% of the films gross – which eventually amounted to a further $19 million. So‚ $22 million for only 20 minutes of screen time sounds like a nice day at the office! SUPERMAN‚ Tom Mankeiwicz‚ Marlon Brando‚ Director Richard Donner‚ Pierre Spengler‚ 1978 (© Warner Bros./Courtesy Everett Collection) Reflected co-screenwriter David Newman‚ “People ask‚ ‘Why did Brando get $3 million for 10 minutes of film?’ Because thanks to Brando they got the financing to make the movie‚ and thanks to Brando‚ Gene Hackman came in‚ and so on. Instead of being a Saturday morning kiddie movie‚ it became a big movie because the world’s most famous actor was in it. It lent class to the production and made it a serious film.”   Marlon Brando / Wikimedia Commons After Superman‚ Brando continued to work his acting magic‚ and received another Oscar nomination for A Dry White Season in 1989‚ before retiring after 2001’s The Score. He was also a lifelong campaigner for the rights of Native Americans‚ even refusing his 1972 Oscar to protest their treatment in Hollywood. Brando‚ unfortunately‚ passed away in 2004‚ but he will forever remain one of the most famous icons of the 20th century. After coming in fourth place for the Iowa Republican Caucus on Monday night‚ Vivek Ramaswamy suspended his campaign and announced his support for Donald Trump‚ who had placed first and who was declared the winner much earlier in the evening. Ramaswamy himself made the move official during in Des Moines‚ where he joined his supporters in chanting "USA!" and thanked them for their efforts in their "movement."
