Fresh Herbs: Cilantro is the signature herb for mojo sauce, but if you can opt for parsley, chives, mint, basil, or a combination. In an oven proof heavy pot combine pork, broth, two-thirds of the garlic, bay leaves, salt, and pepper.Cover tightly and bake 1.5 hours or until pork is very tender. Use slotted spoon to transfer pork to a bowl. Boil the liquid in pot until it's reduced to 1.5 cups, about 30 min. Return pork to pot, add 1/4 cup of the mojo sauce, and simmer 5 minutes.Meanwhile, in a heavy large skillet over medium high heat, add oil, onion, and rest of garlic. Saute until onions are tender, 12 min. Season with a dash of salt and pepper to taste.Transfer pork to serving individual plates. Spoon pan juices over pork. Top with onion mixture, and drizzle with remaining Mojo sauce. Video Notes We use our Dutch Oven or All Clad Pot, as both options are extremely sturdy, cook evenly, and can go straight from stovetop to oven.  Mojo sauce can be prepared up to 3 days in advance and covered/chilled until ready to use.  You can also use this mojo sauce with chicken thighs or beef. Totally unacceptable, and we’re going to hold you accountable,” DeSantis said. “I’m proud to announce that the authorities have identified the dog’s former owner, and State Attorney Suzy Lopez is now pursuing animal cruelty charges against the individual,” he added. The defendant told investigators he was driving to Georgia to escape the hurricane but left his dog ‘Jumbo’ on the side of the road because he couldn’t find anyone to pick the dog up,” Lopez’s office said in a release. From The Hill: The story about Trooper made national headlines and sparked concern among pet-lovers and animal rights advocates alike. The Leon County Human Society later confirmed the dog was safe at its facility after the FHP rescue. DeSantis mentioned the arrest almost in passing during a news conference in which he exchanged words of praise with local law enforcement officials and discussed efforts to financially support first responders affected by the storm. Hillsborough State Attorney Suzy Lopez stood with him. “When this poor dog was left out there,” DeSantis said, “We said … we’re going to nail you when we find out who did it. And that’s exactly what they’re doing here in Hillsborough County with State Attorney Lopez.” Lopez, who owns two bulldogs — one of whom she named Rhonda Santis in honor of the governor — promised stiff consequences. “You don’t get away with doing what this man did in Hillsborough County,” she said. “Not under my watch.” Aldama Garcia, 23, was released from jail early Tuesday on a $2,500 cash bond.
