Cranberry Pinwheels
Cranberry Pinwheels are a delicious holiday appetizer or even dessert made with golden brown, flaky puff pastry, a sweet cranberry filling and drizzled with a vanilla icing!
A SWEET TREAT RECIPE
I had a lot of fun experimenting with these sweet and tangy treats. I really want an easy cranberry handheld snack/dessert for the holidays and instead of going savory, I went with sweet this time and I am so pleased with how they turned out. If you are in charge of bringing an appetizer or desert to a holiday party or potluck, give these a try! They are so easy to make and easy to serve. They only take 30 minutes from start to finish and don’t include any complicated ingredients or steps.
FREQUENTLY ASKED QUESTIONS:
What do I do if my puff pastry log falls apart when I try to cut it? If you find that your puff pastry is hard to cut once you’ve rolled it up, place the rolled up log in the freezer for about 10 minutes then use a serrated knife to cut. When the puff pastry defrosts and gets warm, it can be a little hard to slice so popping it in the freezer for a few minutes will help stiffen it back up and make it much easier to slice. How can I make homemade whole cranberry sauce? If you don’t want to use the store bought whole cranberry sauce, it’s pretty easy to do. Heat 1 cup of whole cranberries, ¼ cup granulated sugar, and 1 Tablespoon lemon juice on the stove until bubbling. Then simmer for 10 minutes. Allow to cool fully before using. Where do I find puff pastry in the store and any tips on using it? Most boxes of puff pastries will come in a box, typically two to in a pack. They’re usually in the frozen section of the store. Before you make these, remove them from the freezer and place them in the fridge to thaw or just leave them on the counter to thaw at room temperature. Check the instructions on the back of the box for how to best thaw them since certain brands thaw best specific ways. Can I double this recipe? Yes, you can double this recipe. In fact, it’s a good one to double so you can use both puff pastries in the package. How can I turn these sweet pinwheels into savory pinwheels? I think these can definitely be savory pinwheels with just a few tweaks. Leave out the brown sugar and cinnamon and don’t top the pinwheels with the sweet frosting. Instead, try adding some crushed pistachios to the mix for a little change in texture and to bring some more savory flavor to the flavor profile. Can I make this with jam instead of cranberry sauce? I definitely think this could easily be made with different jams. Raspberry or strawberry jam would be tasty. If you choose to go this route, I’d suggest adjusting the sugar a bit since the jams will already have sugar in them. How to store leftover pinwheels? These are best eaten the same day, but they will keep for 2 days in the fridge.
INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
sheet of puff pastry – it needs to be defrosted before using.
cream cheese – softened to room temperature. I have a few tips for Softening Cream Cheese Quickly if you’re short on time.
light brown sugar
ground cinnamon
whole cranberry sauce– be sure to grab the can of sauce, not the jelly. If it helps, here is link to whole cranberry sauce (not a paid affiliate link) so you can see what the can looks like.
white cookie frosting – this is optional to add on the pinwheels. But it just makes them look a bit prettier.
HOW TO MAKE CRANBERRY PINWHEELS:
Preheat oven to 400 degrees F and line a baking sheet with parchment paper or a silicone baking mat. Set aside. In a mixing bowl, mix together softened cream cheese, brown sugar, and cinnamon until smooth.
Roll out your sheet of puff pastry and spread the cream cheese mixture evenly over the puff pastry, leaving ½ inch of space on one long side.
Spoon the cranberry sauce over the spread cream cheese and then evenly distribute the cranberry sauce, leaving ½ of space on the same long side as the cream cheese. Roll the puff pastry up (long edge to long edge) until you reach the ½ inch of space.
Cut the log into 12 even pieces and place each pinwheel on the baking sheet. Bake on the center rack of the oven for 24 minutes (or until golden brown).
Allow to cool then sprinkle with brown sugar and drizzle with frosting (optional).
Enjoy!
